Hiya, so I'm looking for a gaming pc build, without outside equipment (screens, keyboards etc), and without an operating system in the build.
My budget is around 500-600€ (euros)

You're going to have to make some pretty serious compromises on hardware unless you increase the budget a bit.

Is it a gaming PC or productivity PC? Inbetween?
For a gaming PC:
CPU: Subsitute your budget from the CPU to the GPU, you'll need it. Intel is fine (i7 or i5) GPU: The Nvidia GTX 1050 TI is a good GPU. 1060 TI if you are pushing money on the GPU, and 1070 TI if you really want to game. Power Supply: Power supply is fine. Ram: DDR4 or DDR3 is fine. 8+ GB would be enough. Motherboard: Really up to you, just get one that will be for your price range.
For a productivity PC:
CPU: I7 is a good choice, you don't really need a GPU for a productivity computer unless you are editing. GPU: You can get a GTX 1050 (ti) if you need a GPU. Power Supply: Power supply is fine. Ram: DDR4 or DDR3 is fine. 8+ GB would be enough. Motherboard: Really up to you, just get one that will be for your price range.
Hope i am of help.

Just dont skimp on the PSU. An inadequate PSU will at best cause stability issues and at worst damage your PC and start a fire in extreme cases.

With that budget, a Ryzen 3 1300X (Or a 1200 if you're willing to overclock) and 1050 Ti are a great combo. If you're willing to push it, I would recommend a 1060 6GB.
Also, do not get a cheap hard drive. They are slower and more likely to fail. Seagate Barracuda and WD Blue are good options. As for the PSU, EVGA makes great PSUs for the price they're at.

I am not looking for something "too big", I just want it to be able to surf and play games properly. I don't care about high graphics, just FPS. I am able to upgrade at some point later.

A GeForce 1050 Ti is perfect for that. The CPU you pair it with isnt as important but you still want at least a modern quad core like the Ryzen 3. 8 GB of RAM is also sufficient and do not buy fancy RAM. It isnt worth it. Get an SSD only if your budget allows after getting those components. Also dont spend a lot on the motherboard but get one with good reviews. Spending more on the motherboard is only worth it for higher end systems and even then it depends on the features you need. If you get an HDD... make sure it is no less than 7000 RPM or you will have terrible load times.

However, CPUs still matter because if your CPU cannot handle the power of your GPU, then it will bottleneck. So I'd probably just split the prices evenly. (Ex. If I had 400 dollars, I'd spend 200 on the GPU, and the other 200 on the CPU).
EDIT: Well I didn't see Windows_ say that you still need a sufficient CPU. Rest in peace this post.
